
Spaghetti with Sausage

Ingredients:
250 g spaghetti
4 sausages, cut into slices or small cubes
1 large onion, finely chopped
2 garlic cloves, crushed or minced
2 large tomatoes, grated or chopped (or 3 tbsp tomato paste)
2 tbsp vegetable oil or olive oil
½ tsp salt (or to taste)
¼ tsp ground black pepper
A pinch of mixed spices or cumin (optional)
½ cup pasta cooking water or a little water/broth as needed
Cooking the pasta:
Boil a large pot of salted water.
Add the spaghetti and cook until tender but still slightly firm (al dente), following package instructions.
Drain the pasta and reserve ½ cup of the cooking water if needed later.
Preparing the sausage:
Heat the oil in a large skillet over medium heat.
Add the sausage pieces and sauté until golden and some fat is released.
Adding onion and garlic:
Add the chopped onion to the skillet and cook until translucent.
Add the minced garlic and sauté for a few seconds until fragrant.
Serving:
Serve the spaghetti with sausage hot.
Optionally, garnish with grated cheese or chopped parsley.
Notes:
You can use tomato paste alone if fresh tomatoes are unavailable.
Sausage can be replaced with any ground meat or chicken slices as desired.
For a spicier dish, add a pinch of chili pepper or hot sauce.


Preparing the sauce:
Add the chopped tomatoes or tomato paste to the skillet.
Add salt, black pepper, and spices as desired.
Let the mixture simmer over low heat for 5–7 minutes until the sauce thickens.
If the sauce is too thick, add a little water, broth, or reserved pasta water to reach the desired
Combining pasta and sauce:
Add the cooked spaghetti to the sauce in the skillet.
Toss well to coat the pasta with the sauce and absorb the flavors.
